I’ve been slacking off because I’m in the process of packing for a big move (THANK GOODNESS!)
Anyway, like I said, I’m doing the BodyRock 30 Day Challenge a second time around - today I finished Day 16, which is a huge bitch. Day 15 is a monster as well. The first go round with the challenge, I really built up a lot of muscle. This second go round is helping me burn a lot of fat and create more definition.
In the continuation of us trying to finish everything in the fridge & freezer prior to our move, last night I made southwestern chicken packets. Super easy, very tasty, low in carbs. Put a chicken breast in a foil packet, add a couple spoonfuls of black beans, 1/4 cup of salsa, some cheese, and some chopped onions & pepper (I made 4 packets) - bake at 375° for 45 minutes. When they’re done, top with some fat free Greek yogurt (“sour cream” in our house…tastes exactly the same).
Every year, my fiance and I go all-out with our Thanksgiving feast. Just for the two of us, seriously. We both love to cook and since we eat so healthy so often, it’s nice to go a little heavy for a holiday (in comparison to most, we still make our feast quite healthy and fresh).
Today, I made coconut flour biscuits in prep for the stuffing I’m going to make.
Coconut Flour biscuits:
1/4 c melted butter
1/3 c unsweetened applesauce
1/2 tsp salt
1/2 tsp baking powder
2/3 c coconut flour
Mix it all, bake at 400° for 25 minutes.
THEN…. chop the biscuits into cubes, spread them out on a cookie sheet, and bake at 350° until they are crispy.
***Let me just say that it smells AMAZING in my apartment right now after cooking these***
Every year, I make homemade stuffing - this is my first year doing it with this bread base. As always, I will mix it in with chicken stock, celery, onion, and sage sausage.
The rest of the menu goes as follows:
A spiced and injected turkey, stuffed with vegetables
Homemade cranberry sauce with orange
Homemade pumpkin and apple pies
Whipped golden potatoes with gravy
Fresh green bean and mushroom side with cream & turkey reduction
Rolls are just boring carbs and neither of us like candied yams, so we skip that shit.
We will make up for the carbs with the post-meal drinking.
